FS#255 - Come up with better way to store comments and tags in Shopify payloads

Currently when order updates are received the comments and tags, OrderSource, are overwritten. This means that there is a risk of comments and tags going missing if a subsequent update arrives with empty tags.

What happens if the comments and tags are legitimately removed?
